It's bison. My favourite is venison. My redneck neighbour likes to go hunting deer and he'd would always give me some and then I would make venison jerky.

It is illegal to sell venison. Never had one.

My uncle hunted elk this year and we had elk burgers, it was very good.

why not salted and half dried it? Sliced it and oiled slices. That would be great with dry chillies and seames. There are many elks there?

I agree vension is the best meat. I think cause its free roaming . A lot of people are anti hunter. I for one love to hunt and fish. I know where my food came from.

Practicing nomadic lifestyle back in those days made us hungry many more often. If we couldn't kill a bison or any animal, we'd be starving under the clear blue sky. So we have to make jerkies as a backup plan. Plus jerkies last the whole winter because winter made our past world into a refrigeratior. ;D ;D ;D

Mark...what other spices needed to be in there besides the shredded papaya, lemon, and fish sauce? I am talking about the Lao version.

Are you supposed to sprinkle monosodium glutamate in there too? If so, what is the purpose?
